Barbecued Pig Recipe
Ingredients:
- 1 whole pig (40-50 pounds)
- 1 cup brown sugar
- 1 cup paprika
- 1 cup garlic powder
- 1 cup onion powder
- 1 cup chili powder
- 1 cup salt
- 1 cup black pepper
- 4 cups apple cider vinegar
- 4 cups apple juice
- 4 cups water
- 3 cups mustard
- 2 cups Worcestershire sauce
- 2 cups soy sauce
Instructions:
- Clean the pig thoroughly, removing any hair and internal organs.
- Mix all the dry ingredients together to form a spice rub.
- Rub the spice mixture all over the pig, making sure to get into all the crevices and cavities.
- In a large bowl, mix together the apple cider vinegar, apple juice, water, mustard, Worcestershire sauce, and soy sauce to create a marinade.
- Place the pig in a large deep dish or pan and pour the marinade over the pig, making sure it is fully submerged.
- Cover the pan with plastic wrap and refrigerate overnight.
- Build a fire in your barbecue pit or grill.
- Remove the pig from the marinade and place it on the grill.
- Cook the pig for 10-12 hours, turning it every hour or so to ensure even cooking.
- When the pig is fully cooked (the internal temperature of the meat should be 165-170°F), remove it from the grill and let it rest for 10-15 minutes before carving.
