Basque Tuna Treat

Ingredients:

  • 1 lb. fresh tuna steaks
  • 1 tbsp. olive oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 tsp. smoked paprika
  • 1/2 c. white wine
  • 1 can diced tomatoes
  • 1/4 c. chopped fresh parsley
  • Salt and pepper to taste

Instructions:

  1. Heat oil in large skillet over medium heat.
  2. Add onion, red bell pepper, and garlic to skillet. Cook for about 5-7 minutes until softened.
  3. Season tuna steaks with salt and pepper.
  4. Push the vegetables to the sides of the skillet and add the tuna steaks to the center. Cook for about 2-3 minutes on each side, until browned.
  5. Remove tuna steaks from skillet and set aside.
  6. Add white wine to the skillet and scrape the bottom to remove any browned bits from the pan.
  7. Add diced tomatoes and smoked paprika to the skillet. Simmer for about 10-15 minutes.
  8. Add parsley to the skillet and stir well.
  9. Return tuna steaks to the skillet and spoon sauce on top.
  10. Simmer for an additional 5-7 minutes or until tuna is cooked through.
  11. Season with additional salt and pepper as desired.
