Beef Curry: Thai Recipe

Ingredients:

  • 1 lb of beef (sliced)
  • 1 can of coconut milk
  • 1 onion (chopped)
  • 3 cloves of garlic (minced)
  • 2 tbsp of curry powder
  • 2 tbsp of fish sauce
  • 2 tbsp of vegetable oil
  • 1 tbsp of sugar
  • Salt and pepper to taste
  • Coriander leaves for garnish

Instructions:

  1. Heat the vegetable oil in a large skillet over medium-high heat.
  2. Add the onions and garlic and sauté until the onions are translucent.
  3. Add the beef to the skillet and cook for 4-5 minutes or until browned.
  4. Add the curry powder to the skillet and stir well to coat.
  5. Pour in the coconut milk, fish sauce, and sugar to the skillet and stir everything together.
  6. Bring the curry to a simmer and cook for 15-20 minutes or until the beef is cooked through and the sauce has thickened.
  7. Taste and adjust the seasoning with salt and pepper if needed.
  8. Serve immediately over steamed rice and garnish with coriander leaves.
