Beef Enchiladas: Easy Recipe
Ingredients
- 1 lb. ground beef
- 1 small onion, diced
- 1 can (15 oz.) black beans, drained and rinsed
- 1 can (10 oz.) enchilada sauce
- 1 cup shredded Mexican blend cheese
- 8-10 small flour tortillas
- Salt and pepper, to taste
Instructions
- Preheat oven to 375°F.
- In a large skillet, cook the ground beef and onion over medium heat until the beef is no longer pink. Drain the excess fat.
- Add the black beans to the skillet and stir to combine with the beef mixture.
- Pour half of the enchilada sauce into the bottom of a 9×13-inch baking dish.
- Take a flour tortilla and spoon 2-3 tablespoons of the beef mixture down the center of the tortilla. Sprinkle some cheese on top. Roll up the tortilla and place it seam side down in the baking dish. Repeat for the remaining tortillas and beef mixture.
- Pour the remaining enchilada sauce over the top of the rolled-up tortillas. Sprinkle the shredded cheese on top.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
