Bibimbap Recipe
Ingredients:
- 1 cup uncooked rice
- 1 medium carrot, julienned
- 1 medium zucchini, julienned
- 2 cups spinach, washed and stems removed
- 8 oz. ground beef
- 1 Tbsp. soy sauce
- 1 Tbsp. sesame oil
- 1 Tbsp. gochujang (Korean red pepper paste)
- 1 Tbsp. sugar
- 2 cloves garlic, minced
- 3 Tbsp. vegetable oil
- 2 eggs
- Salt and pepper, to taste
Instructions:
- Cook the rice according to package instructions. Set aside.
- Combine the soy sauce, sesame oil, gochujang, sugar, and garlic in a bowl. Add the ground beef and mix well. Allow to marinate for at least 30 minutes.
- Heat 1 tablespoon of vegetable oil in a pan over medium-high heat. Add the marinated beef and cook until browned and cooked through. Set aside.
- In the same pan, add another tablespoon of vegetable oil. Add the julienned carrots and zucchini and cook for 3-4 minutes until slightly softened. Add a pinch of salt and pepper. Remove from pan and set aside.
- In the same pan, add the spinach and cook just until wilted. Remove from pan and set aside.
- Heat the remaining tablespoon of vegetable oil in the pan over medium-high heat. Crack 2 eggs into the pan and fry until the whites are set but the yolks are still runny.
- To assemble the bibimbap, divide the cooked rice into 4 bowls. Arrange the cooked vegetables and beef on top of the rice. Place a fried egg on top of each bowl. Serve with additional gochujang sauce if desired.
