Blanquette of Hen, Tip of Colombo Recipe

Ingredients

  • 1 hen
  • 4 carrots, peeled and sliced
  • 2 onions, peeled and chopped
  • 2 cloves of garlic, minced
  • 1 bouquet garni (thyme, bay leaves, parsley)
  • 1 tsp. of turmeric
  • 1 tbsp. of curry powder
  • 1 lemon, juiced
  • 1 cup of crème fraîche
  • 2 egg yolks
  • Salt and pepper to taste

Instructions

  1. Fill a large pot with enough water to cover the hen. Add the sliced carrots, chopped onions, minced garlic, bouquet garni, turmeric, and curry powder. Season with salt and pepper and bring to a boil.
  2. Add the hen to the pot and reduce the heat to medium-low. Simmer for 1 to 1 1/2 hours, or until the hen is cooked through and tender.
  3. Remove the hen from the pot and strain the cooking liquid through a fine sieve.
  4. Return the cooking liquid to the pot and add the lemon juice. Bring to a boil and reduce the heat to low.
  5. In a small bowl, whisk together the crème fraîche and egg yolks. Slowly pour the mixture into the pot, whisking constantly to prevent curdling.
  6. Cut the hen into serving pieces and add to the pot. Cook for another 10 to 15 minutes, or until heated through.
  7. Adjust seasoning with salt and pepper, and remove the bouquet garni before serving.
