Bo Bun & Duck Confit Spring Rolls Recipe

Ingredients:

  • 12 rice spring roll wrappers
  • 1 cup of cooked white rice noodles
  • 1 large carrot, julienned
  • 1/2 cucumber, julienned
  • 1/4 cup of chopped fresh cilantro leaves
  • 1/4 cup of chopped fresh mint leaves
  • 4 cooked duck confit legs
  • 1 tablespoon of soy sauce
  • 1 tablespoon of hoisin sauce
  • 1 tablespoon of lime juice
  • 1 tablespoon of rice vinegar
  • 1 teaspoon of sesame oil
  • 1/4 teaspoon of red pepper flakes
  • 1/4 teaspoon of salt
  • Oil, for frying

Instructions:

  1. Remove the meat from the duck confit legs and shred it with a fork.
  2. In a small bowl, whisk together the soy sauce, hoisin sauce, lime juice, rice vinegar, sesame oil, red pepper flakes, and salt.
  3. In a large mixing bowl, combine the shredded duck meat, cooked rice noodles, julienned carrots and cucumber, and the chopped cilantro and mint.
  4. Add the sauce to the mixing bowl and toss everything together until well-coated.
  5. Fill a large shallow dish with warm water. Working with one rice paper wrapper at a time, dip it into the water for a few seconds until it softens.
  6. Lay the wrapper flat on a clean surface and add a spoonful of the duck and noodle mixture to the center of the wrapper.
  7. Fold in the sides of the wrapper towards the center, then roll it up from one end to create a spring roll. Repeat until you’ve used all of the filling.
  8. Heat a large skillet with enough oil to cover the bottom over medium-high heat.
  9. Once the oil is hot, add the spring rolls to the skillet (in batches if necessary) and fry them until they’re golden brown on all sides, about 2 to 3 minutes per side.
  10. Use a slotted spoon to transfer the cooked spring rolls to a paper towel-lined plate to drain excess oil.
  11. Serve immediately and enjoy!
