Bo Bun & Duck Confit Spring Rolls Recipe
Ingredients:
- 12 rice spring roll wrappers
- 1 cup of cooked white rice noodles
- 1 large carrot, julienned
- 1/2 cucumber, julienned
- 1/4 cup of chopped fresh cilantro leaves
- 1/4 cup of chopped fresh mint leaves
- 4 cooked duck confit legs
- 1 tablespoon of soy sauce
- 1 tablespoon of hoisin sauce
- 1 tablespoon of lime juice
- 1 tablespoon of rice vinegar
- 1 teaspoon of sesame oil
- 1/4 teaspoon of red pepper flakes
- 1/4 teaspoon of salt
- Oil, for frying
Instructions:
- Remove the meat from the duck confit legs and shred it with a fork.
- In a small bowl, whisk together the soy sauce, hoisin sauce, lime juice, rice vinegar, sesame oil, red pepper flakes, and salt.
- In a large mixing bowl, combine the shredded duck meat, cooked rice noodles, julienned carrots and cucumber, and the chopped cilantro and mint.
- Add the sauce to the mixing bowl and toss everything together until well-coated.
- Fill a large shallow dish with warm water. Working with one rice paper wrapper at a time, dip it into the water for a few seconds until it softens.
- Lay the wrapper flat on a clean surface and add a spoonful of the duck and noodle mixture to the center of the wrapper.
- Fold in the sides of the wrapper towards the center, then roll it up from one end to create a spring roll. Repeat until you’ve used all of the filling.
- Heat a large skillet with enough oil to cover the bottom over medium-high heat.
- Once the oil is hot, add the spring rolls to the skillet (in batches if necessary) and fry them until they’re golden brown on all sides, about 2 to 3 minutes per side.
- Use a slotted spoon to transfer the cooked spring rolls to a paper towel-lined plate to drain excess oil.
- Serve immediately and enjoy!
