Ingredients:

  • 1 boar shoulder, cubed
  • 2 onions, chopped
  • 3 garlic cloves, minced
  • 1 can of beer
  • 1 cup of beef broth
  • 2 tbsp of tomato paste
  • 1 tbsp of flour
  • 1 tbsp of olive oil
  • 1 tsp of smoked paprika
  • 1 tsp of thyme
  • 1 bay leaf
  • 8 oz of mushrooms, sliced
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 350°F (180°C).
  2. In a Dutch oven, heat the olive oil on medium-high heat. Brown the boar in batches and set aside.
  3. In the same pot, sauté onions and garlic until softened.
  4. Sprinkle flour and smoked paprika over the onions and garlic. Stir to coat.
  5. Pour in the beer and deglaze the pot, scraping the brown bits from the bottom.
  6. Add the beef broth, tomato paste, thyme, bay leaf, salt and pepper. Bring to a boil and stir.
  7. Add the boar back into the pot. Cover with a tight-fitting lid and cook in the oven for 45 minutes.
  8. Stir in the mushrooms and return to the oven for another 30 minutes or until the boar is tender.
