Bolognese Spaghetti Squash: Gourmet Recipe
Ingredients:
- 1 spaghetti squash
- 1 pound ground beef
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped carrots
- 4 cloves minced garlic
- 1 can (28 oz) whole peeled tomatoes, crushed
- 1 tablespoon tomato paste
- 1/2 cup red wine
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1/4 cup chopped fresh parsley
- 1/4 cup grated Parmesan cheese
Instructions:
- Preheat oven to 375°F (190°C). Cut spaghetti squash in half lengthwise and remove seeds.
- Place spaghetti squash halves facedown on a baking sheet and bake for 40-50 minutes or until tender.
- While spaghetti squash is baking, cook ground beef in a large skillet over medium heat until browned. Drain excess fat.
- Add onions, celery, carrots, and garlic to the skillet and cook for 5-7 minutes or until vegetables are tender.
- Add crushed tomatoes, tomato paste, red wine, oregano, basil, salt, black pepper, and red pepper flakes to the skillet. Bring to a simmer and cook for 15-20 minutes or until sauce has thickened.
- Once spaghetti squash is done baking, use a fork to shred the inside of each squash half into strands, leaving approximately 1/4 inch of flesh intact. Place strands in a large bowl.
- Add the meat sauce to the spaghetti squash and toss to combine.
- Divide the spaghetti squash and meat sauce mixture into four portions. Top each with chopped parsley and grated Parmesan cheese.
