Bresse Poultry Baeckeoffe with Candied Lemon and Tajine-Style Vegetables

Ingredients:

  • 1 whole Bresse poultry
  • 1 pound baby potatoes
  • 2 onions
  • 2 cloves garlic
  • 1 orange
  • 1 lemon
  • 1 tablespoon honey
  • 1 tablespoon grated fresh ginger
  • 2 red bell peppers, sliced
  • 2 yellow squash, sliced
  • 2 zucchini, sliced
  • 2 carrots, sliced
  • 1 can chickpeas
  • 1 tablespoon ras el hanout
  • 1 teaspoon cinnamon
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • Olive oil

Instructions:

  1. Preheat your oven to 375°F.
  2. Peel the potatoes and cut them into quarters. Set aside.
  3. Slice one of the onions and set aside.
  4. Mince the garlic and set aside.
  5. Cut the orange and lemon into 1/4″ slices. Remove any seeds.
  6. Drizzle the honey over the slices.
  7. Heat a large skillet over medium-high heat and add a drizzle of olive oil.
  8. Lightly brown the Bresse poultry on all sides. Remove from the skillet.
  9. Add the sliced onion and minced garlic to the skillet and cook until fragrant and soft.
  10. Add the sliced bell peppers, squash, zucchini, and carrots to the skillet and cook until slightly softened.
  11. Drain the chickpeas and add them to the skillet.
  12. Season with the ras el hanout, cinnamon, turmeric, salt, and pepper. Stir to combine.
  13. Layer the potatoes, candied orange and lemon slices, and half of the vegetable mixture in a large casserole dish.
  14. Add the Bresse poultry on top of the vegetables.
  15. Layer the remaining vegetables on top of the poultry.
  16. Add enough water to the casserole to come halfway up the sides of the dish.
  17. Cover the dish with aluminum foil and place in the preheated oven.
  18. Bake for 2-3 hours or until the Bresse poultry and vegetables are tender and cooked through.
