Bresse Poultry Baeckeoffe with Candied Lemon and Tajine-Style Vegetables
Ingredients:
- 1 whole Bresse poultry
- 1 pound baby potatoes
- 2 onions
- 2 cloves garlic
- 1 orange
- 1 lemon
- 1 tablespoon honey
- 1 tablespoon grated fresh ginger
- 2 red bell peppers, sliced
- 2 yellow squash, sliced
- 2 zucchini, sliced
- 2 carrots, sliced
- 1 can chickpeas
- 1 tablespoon ras el hanout
- 1 teaspoon cinnamon
- 1 teaspoon turmeric
- Salt and pepper to taste
- Olive oil
Instructions:
- Preheat your oven to 375°F.
- Peel the potatoes and cut them into quarters. Set aside.
- Slice one of the onions and set aside.
- Mince the garlic and set aside.
- Cut the orange and lemon into 1/4″ slices. Remove any seeds.
- Drizzle the honey over the slices.
- Heat a large skillet over medium-high heat and add a drizzle of olive oil.
- Lightly brown the Bresse poultry on all sides. Remove from the skillet.
- Add the sliced onion and minced garlic to the skillet and cook until fragrant and soft.
- Add the sliced bell peppers, squash, zucchini, and carrots to the skillet and cook until slightly softened.
- Drain the chickpeas and add them to the skillet.
- Season with the ras el hanout, cinnamon, turmeric, salt, and pepper. Stir to combine.
- Layer the potatoes, candied orange and lemon slices, and half of the vegetable mixture in a large casserole dish.
- Add the Bresse poultry on top of the vegetables.
- Layer the remaining vegetables on top of the poultry.
- Add enough water to the casserole to come halfway up the sides of the dish.
- Cover the dish with aluminum foil and place in the preheated oven.
- Bake for 2-3 hours or until the Bresse poultry and vegetables are tender and cooked through.
