Briouats Batata Recipe

Ingredients

  • 4 medium potatoes, peeled and cubed
  • 1 onion, finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup minced fresh parsley leaves
  • 1/2 cup minced fresh cilantro leaves
  • 1/2 cup toasted almonds, finely chopped
  • 1/2 cup raisins
  • 12 sheets phyllo dough
  • 1/2 cup melted butter

Instructions

  1. Preheat the oven to 375°F.
  2. In a large pot, boil the potatoes until they are soft.
  3. Drain the potatoes and mash with a fork or potato masher.
  4. In a frying pan, sauté the onion in olive oil until it is golden.
  5. Add the salt, black pepper, cumin, cinnamon, and cayenne pepper to the onions and cook for 2 minutes.
  6. Add the onion mixture to the mashed potatoes and mix well.
  7. Add the parsley, cilantro, almonds, and raisins to the potato mixture and mix well.
  8. Place a sheet of phyllo dough on a clean surface and brush it with melted butter.
  9. Place a spoonful of the potato mixture on the phyllo dough and fold it into a triangle.
  10. Brush the top of the triangle with more melted butter and place on a baking sheet.
  11. Repeat with the remaining phyllo dough and potato mixture.
  12. Bake the briouats for 20-25 minutes, or until they are golden brown and crispy.
  13. Serve hot and enjoy!
