Broad Beans with Chorizo, Mushrooms and Mint

Ingredients:

  • 1 pound broad beans, shelled
  • 4 ounces chorizo sausage, sliced
  • 8 ounces mushrooms, sliced
  • 1/4 cup fresh mint leaves, chopped
  • 3 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions:

  1. Bring a pot of salted water to a boil. Add the broad beans and cook for 2 to 3 minutes or until tender. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chorizo and cook until browned, stirring occasionally. Remove the chorizo from the skillet and set aside.
  3. Add the mushrooms to the skillet and cook for 3 to 4 minutes or until tender.
  4. Add the garlic and cook for an additional 30 seconds or until fragrant.
  5. Add the broad beans and chorizo back to the skillet. Season with salt and black pepper. Cook for an additional 2 to 3 minutes or until heated through.
  6. Remove from heat and stir in chopped mint leaves.
