Broad Beans with Chorizo, Mushrooms and Mint
Ingredients:
- 1 pound broad beans, shelled
- 4 ounces chorizo sausage, sliced
- 8 ounces mushrooms, sliced
- 1/4 cup fresh mint leaves, chopped
- 3 cloves garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions:
- Bring a pot of salted water to a boil. Add the broad beans and cook for 2 to 3 minutes or until tender. Drain and set aside.
- Heat olive oil in a large skillet over medium-high heat. Add the chorizo and cook until browned, stirring occasionally. Remove the chorizo from the skillet and set aside.
- Add the mushrooms to the skillet and cook for 3 to 4 minutes or until tender.
- Add the garlic and cook for an additional 30 seconds or until fragrant.
- Add the broad beans and chorizo back to the skillet. Season with salt and black pepper. Cook for an additional 2 to 3 minutes or until heated through.
- Remove from heat and stir in chopped mint leaves.
