Brocciu and Spinach Ravioli Recipe

Ingredients:

  • 1 and 1/2 cups Brocciu cheese
  • 1 cup chopped spinach
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 egg, beaten
  • 2 cups all-purpose flour

  • 3 eggs
  • 1/4 cup water

Instructions:

  1. Combine Brocciu cheese, spinach, garlic, Parmesan cheese, salt, pepper and beaten egg in a mixing bowl. Set aside.
  2. For the pasta dough, mix flour and salt in a separate mixing bowl.
  3. Add eggs and water to the flour mixture.
  4. Mix together until the dough comes together.
  5. Transfer the dough on a floured surface and knead for 5-10 minutes until the dough is smooth and elastic.
