Cannelloni Gratin with Tomato, Parmesan, Olives and Tarragon Recipe

Ingredients:

  • 10-12 cannelloni tubes
  • 1 jar of tomato sauce (500 g)
  • 1 cup of pitted black olives, chopped
  • 1/2 cup of grated Parmesan cheese
  • 1 tablespoon of fresh tarragon, chopped
  • 1 tablespoon of olive oil for greasing the baking dish
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cook the cannelloni tubes according to the package instructions. Rinse them in cold water and drain.
  3. In a bowl, mix the tomato sauce with the chopped olives and fresh tarragon. Add salt and pepper to taste.
  4. Grease a baking dish with olive oil. Spoon a thin layer of the tomato sauce onto the bottom of the dish.
  5. Fill the cannelloni tubes with the remaining tomato sauce using a spoon or piping bag.
  6. Arrange the cannelloni tubes in a single layer in the baking dish.
  7. Spoon the remaining tomato sauce on top of the cannelloni tubes.
  8. Sprinkle the grated Parmesan cheese on top.
  9. Cover with aluminum foil and bake for 25-30 minutes.
  10. Remove the foil and bake for another 10-15 minutes, or until the cheese is melted and golden brown.
  11. Let it rest for 5 minutes before serving.
