Catch of the Day in a Salt Crust Recipe
Ingredients:
- 1 whole fish (trout, salmon, snapper, etc.), scaled and gutted
- 3-4 cups kosher salt
- 4 egg whites
- 1 tablespoon fennel seeds
- 1 tablespoon coriander seeds
- 1 tablespoon black peppercorns
- 1 lemon, sliced
- 1 bunch fresh herbs (thyme, rosemary, parsley, etc.)
Instructions:
- Preheat oven to 400°F.
- In a large bowl, whisk together egg whites, fennel seeds, coriander seeds, and black peppercorns until foamy.
- Add kosher salt to the egg white mixture and mix well. Salt mixture should hold its shape when pressed with a spoon but not be too wet.
- Place a layer of salt mixture on the bottom of a baking dish large enough to hold the fish.
- Stuff the fish with sliced lemon and fresh herbs.
- Place the fish on top of the salt mixture in the baking dish.
- Completely cover the fish with the remaining salt mixture, pressing it down firmly to create a solid crust.
- Bake the fish for approximately 30-40 minutes or until a thermometer inserted into the thickest part of the fish registers 145°F.
- Remove from oven and allow to cool for 10-15 minutes before breaking open the salt crust.
- Remove the fish from the salt crust and serve on a platter.
