Catch of the Day in a Salt Crust Recipe

Ingredients:

  • 1 whole fish (trout, salmon, snapper, etc.), scaled and gutted
  • 3-4 cups kosher salt
  • 4 egg whites
  • 1 tablespoon fennel seeds
  • 1 tablespoon coriander seeds
  • 1 tablespoon black peppercorns
  • 1 lemon, sliced
  • 1 bunch fresh herbs (thyme, rosemary, parsley, etc.)

Instructions:

  1. Preheat oven to 400°F.
  2. In a large bowl, whisk together egg whites, fennel seeds, coriander seeds, and black peppercorns until foamy.
  3. Add kosher salt to the egg white mixture and mix well. Salt mixture should hold its shape when pressed with a spoon but not be too wet.
  4. Place a layer of salt mixture on the bottom of a baking dish large enough to hold the fish.
  5. Stuff the fish with sliced lemon and fresh herbs.
  6. Place the fish on top of the salt mixture in the baking dish.
  7. Completely cover the fish with the remaining salt mixture, pressing it down firmly to create a solid crust.
  8. Bake the fish for approximately 30-40 minutes or until a thermometer inserted into the thickest part of the fish registers 145°F.
  9. Remove from oven and allow to cool for 10-15 minutes before breaking open the salt crust.
  10. Remove the fish from the salt crust and serve on a platter.
