Ingredients

  • 3 eggs
  • 1/4 cup cooked chicken, chopped
  • 1/4 cup fresh morel mushrooms, cleaned and sliced
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a small non-stick skillet, melt 1 tablespoon of butter over medium heat.
  2. Add the sliced morel mushrooms to the skillet and sauté until golden brown.
  3. Add the chopped chicken to the skillet and sauté for another minute.
  4. Remove the mushroom and chicken mixture from the skillet and set aside.
  5. In a small mixing bowl, whisk the eggs together with salt and pepper to taste.
  6. Heat the same skillet over medium heat and add 1 tablespoon of butter
  7. Pour the whisked eggs into the skillet and allow it to cook for 1-2 minutes or until the edges start to set.

  11. Cook for another 30 seconds to 1 minute, or until the cheese is melted and the omelet is cooked through.
  12. Slide the omelet onto a plate and serve hot.
