Ingredients:
- 1lb boneless, skinless chicken breasts
- 1/2 cup uncooked quinoa
- 1/2 cup frozen peas
- 1/2 cup diced carrots
- 1/4 cup chopped fresh parsley
- 2 eggs
- 1/4 cup chicken broth
- 1 teaspoon olive oil
Instructions:
- Preheat your oven to 375°F (190°C).
- Cook the quinoa according to the package directions. Set aside.
- In a skillet, heat the olive oil over medium-high heat. Add the diced carrots and frozen peas. Cook until the vegetables are tender, about 5 minutes. Remove from heat and set aside.
- Chop the chicken breast into small, bite-sized pieces.
- In a large mixing bowl, whisk together the eggs and chicken broth. Add the chopped chicken, cooked quinoa, and vegetable mixture. Mix until well combined.
- Line a baking sheet with parchment paper. Spoon the mixture onto the baking sheet, forming small, even-sized balls. Flatten each ball slightly with your hand to form patties.
- Bake the patties for 25-30 minutes or until lightly golden brown on the outside and completely cooked through on the inside.
- Serve warm garnished with fresh parsley.
