Chicken Madras Recipe

Ingredients

  • 1 kg chicken, cut into pieces
  • 2 onions, chopped
  • 4 garlic cloves, minced
  • 2 teaspoons ginger paste
  • 2 tablespoons vegetable oil
  • 2 tablespoons Madras curry powder
  • 1 teaspoon turmeric powder
  • 1 tablespoon tomato paste
  • 1 cup water
  • Salt to taste
  • Coriander leaves for garnish

Instructions

  1. Heat oil in a large saucepan on medium heat. Add onions and garlic, and fry until onions are browned.
  2. Add chicken pieces and fry until browned on all sides.
  3. Mix together Madras curry powder, turmeric powder and tomato paste with a tablespoon of water to make a paste.
  4. Add the spice paste to the saucepan and fry for 2-3 minutes.
  5. Add 1 cup of water to the saucepan, bring to a simmer and reduce heat to low.
  6. Cover and simmer for 20-25 minutes or until chicken is cooked through.
  7. Add salt to taste.
  8. Garnish with coriander leaves and serve with rice or naan bread.
