Chicken Madras Recipe
Ingredients
- 1 kg chicken, cut into pieces
- 2 onions, chopped
- 4 garlic cloves, minced
- 2 teaspoons ginger paste
- 2 tablespoons vegetable oil
- 2 tablespoons Madras curry powder
- 1 teaspoon turmeric powder
- 1 tablespoon tomato paste
- 1 cup water
- Salt to taste
- Coriander leaves for garnish
Instructions
- Heat oil in a large saucepan on medium heat. Add onions and garlic, and fry until onions are browned.
- Add chicken pieces and fry until browned on all sides.
- Mix together Madras curry powder, turmeric powder and tomato paste with a tablespoon of water to make a paste.
- Add the spice paste to the saucepan and fry for 2-3 minutes.
- Add 1 cup of water to the saucepan, bring to a simmer and reduce heat to low.
- Cover and simmer for 20-25 minutes or until chicken is cooked through.
- Add salt to taste.
- Garnish with coriander leaves and serve with rice or naan bread.
