Family Recipe: Chicken Meatball

Ingredients:

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1/4 cup milk
  • 1/4 cup finely chopped onion
  • 2 cloves minced garlic
  • 1 egg, lightly beaten
  • 1 tbsp chopped fresh basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Olive oil for frying

Instructions:

  1. In a large mixing bowl, combine ground chicken, breadcrumbs, parmesan cheese, milk, onion, garlic, egg, basil, salt, and black pepper. Mix well until all ingredients are well combined.
  2. Using a medium cookie scoop, scoop mixture out and shape into 1 1/2 inch balls. Place the meatballs on a plate or tray. Continue until no mixture remains.
  3. In a pan over medium heat, add olive oil. When hot, add the meatballs, being careful not to overcrowd the pan. Cook for 2-3 minutes or until lightly browned on one side, then flip to brown the other side for another 2-3 minutes.
  4. When all of the meatballs are browned, reduce the heat to low, cover the pan with a lid and cook for about 10-12 minutes or until the meatballs are cooked through with an internal temperature of 165°F.
  5. Remove the lid and continue cooking for another minute or two to crisp up the exterior of the meatballs.
  6. Remove the meatballs from the pan with a slotted spoon and serve.

Serving Suggestions:
