Chicken Pie with Potatoes Recipe

Ingredients:

  • 1 1/2 lb potatoes, peeled and chopped
  • 1 lb skinless, boneless chicken breast
  • 1 onion, chopped
  • 1/4 cup all-purpose flour
  • 1/4 cup unsalted butter
  • 1 1/4 cup chicken broth
  • 1/2 cup whole milk
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp dried thyme
  • 1 pie crust
  • 1 egg, whisked

Instructions:

  1. Boil the potatoes until they are tender. Then drain and mash them until smooth. Set aside.
  2. Cut the chicken into small pieces and season them with salt and pepper.
  3. In a skillet, cook the chicken over medium heat until it’s no longer pink. Remove the chicken from the skillet and set aside.
  4. In the same skillet, melt the butter over medium heat. Add the onions and cook until they are tender and translucent.
  5. Sprinkle the flour over the onions and butter. Stir until the mixture thickens and turns a golden brown color.
  6. Slowly pour in the chicken broth and whisk until the mixture is smooth and thickens.

  10. Roll the pie crust into a circle that is 12 inches (30 cm) in diameter. Place it into a 9-inch (23 cm) pie dish. Trim the edges to fit the dish.
  11. Pour the chicken mixture over the pie crust.
  12. Spread the mashed potatoes over the chicken mixture.
  13. Brush the edges of the pie crust with the whisked egg.
  14. Bake the chicken pie for 45-50 minutes or until the crust is golden brown.
  15. Let the pie cool for a few minutes before serving.
