Chicken Rolls with Thai Flavors

Ingredients:

  • 8 chicken breasts
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon fish sauce
  • 1 tablespoon grated ginger
  • 2 garlic cloves, minced
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup cilantro, chopped
  • 1/2 cup peanuts, chopped
  • 8 large lettuce leaves

Instructions:

  1. Preheat oven to 375°F/180°C.
  2. Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness.
  3. In a bowl, mix together the soy sauce, honey, rice vinegar, fish sauce, ginger, garlic, and red pepper flakes.
  4. Place the chicken breasts in the marinade and let sit for 30 minutes.
  5. Remove the chicken from the marinade and discard the marinade.
  6. Place the chicken breasts on a baking sheet and bake for 20-25 minutes, or until cooked through.
  7. Remove the chicken from the oven and let cool for a few minutes.
  8. Cut each chicken breast into 4 strips.
  9. Place a large lettuce leaf on a plate and top with 2-3 chicken strips.
  10. Sprinkle with cilantro and peanuts.
  11. Roll the lettuce leaf up around the chicken.
  12. Repeat with the remaining chicken strips and lettuce leaves.
  13. Serve immediately.
