Chicken Tagine Recipe

Ingredients:

  • 1.5 kg chicken legs and thighs (skin-on)
  • 2 tbsp olive oil
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 2 tsp ground ginger
  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground allspice
  • 1/2 tsp ground black pepper
  • 1/2 tsp salt
  • 2 cups low-sodium chicken broth
  • 2 cups canned chickpeas, drained and rinsed
  • 1/2 cup honey
  • 1/2 cup dried apricots, halved
  • 1/2 cup pitted green olives
  • 2 tbsp chopped fresh parsley, for garnish
  • 2 tbsp chopped fresh cilantro, for garnish

Instructions:

  1. Preheat the oven to 350°F (180°C).
  2. In a large oven-safe pot or Dutch oven, heat the olive oil over medium heat. Add the chicken legs and thighs, and sear them for about 5 minutes on each side until they are browned. Transfer the chicken to a plate and set aside.
  3. In the same pot, sauté the onions and garlic until they are soft and fragrant, about 3-4 minutes. Add the ginger, smoked paprika, cumin, coriander, cinnamon, allspice, black pepper, and salt, and cook for another 2 minutes.
  4. Pour in the chicken broth, chickpeas, honey, and apricots, and stir well. Return the chicken to the pot, and immerse it in the liquid. Cover the pot with a lid, and transfer to the oven. Cook for 45 minutes, then remove the lid and add the green olives. Cook for another 15 minutes until the chicken is cooked through and tender.
  5. Remove the pot from the oven and let it rest for 5 minutes. Sprinkle with chopped parsley and cilantro, and serve hot. You may accompany it with some warm couscous.
