Chicken with Champagne, Honey and Polenta Recipe

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup champagne
  • 1/2 cup honey
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1/2 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup polenta
  • 4 cups chicken or vegetable broth
  • 1/2 cup grated parmesan cheese
  • 2 tbsp unsalted butter

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a medium bowl, whisk together champagne, honey, olive oil, garlic, thyme, salt, and black pepper.
  3. Heat a large oven-safe skillet over medium-high heat. Add the chicken breasts to the skillet and brown on both sides, about 3-4 minutes per side.
  4. Pour the champagne mixture over the chicken, and transfer the skillet to the oven. Bake for 20-25 minutes or until the internal temperature of the chicken reaches 165°F (75°C).
  5. Meanwhile, in a medium saucepan, bring chicken or vegetable broth to a boil. Reduce the heat to low, and slowly whisk in the polenta. Continue to whisk until the polenta is thick and creamy, about 20 minutes.
  6. Stir in the parmesan cheese and butter until melted and well combined.
  7. Remove the skillet of chicken from the oven and let rest for a few minutes before serving. Serve the chicken with a spoonful of the champagne-honey sauce and a generous scoop of the polenta on the side.
