Chicken with Champagne, Honey and Polenta Recipe
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup champagne
- 1/2 cup honey
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1/2 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup polenta
- 4 cups chicken or vegetable broth
- 1/2 cup grated parmesan cheese
- 2 tbsp unsalted butter
Instructions:
- Preheat oven to 375°F (190°C).
- In a medium bowl, whisk together champagne, honey, olive oil, garlic, thyme, salt, and black pepper.
- Heat a large oven-safe skillet over medium-high heat. Add the chicken breasts to the skillet and brown on both sides, about 3-4 minutes per side.
- Pour the champagne mixture over the chicken, and transfer the skillet to the oven. Bake for 20-25 minutes or until the internal temperature of the chicken reaches 165°F (75°C).
- Meanwhile, in a medium saucepan, bring chicken or vegetable broth to a boil. Reduce the heat to low, and slowly whisk in the polenta. Continue to whisk until the polenta is thick and creamy, about 20 minutes.
- Stir in the parmesan cheese and butter until melted and well combined.
- Remove the skillet of chicken from the oven and let rest for a few minutes before serving. Serve the chicken with a spoonful of the champagne-honey sauce and a generous scoop of the polenta on the side.
Verdict:
This chicken dish is both elegant and delicious. The combination of champagne and honey creates a perfect balance of sweet and tangy flavors, while the polenta provides a creamy and comforting side dish. This dish is perfect for a special occasion or a fancy dinner party.
