Cider and Raw Apple Marinated Lisettes on Rye Bread

Ingredients:

  • 1 lb. fresh lisettes, cleaned and filleted
  • 1 cup apple cider
  • 1 Granny Smith apple, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 2 tbsp. honey
  • 2 tbsp. apple cider vinegar
  • Salt and pepper, to taste
  • 1 loaf of rye bread, sliced

Instructions:

  1. In a large bowl, whisk together apple cider, olive oil, honey, apple cider vinegar, salt and pepper.
  2. Add the lisettes, apple slices, red onion and chopped parsley to the bowl.
  3. Marinate for at least 1 hour, stirring occasionally.
  4. Preheat the oven to 350°F.
  5. On a baking sheet, spread out the slices of rye bread and bake for 5-6 minutes until slightly toasted.
  6. To assemble, place a few slices of marinated lisettes on top of each slice of rye bread.
