Club Sandwich: Lamb Recipe

Ingredients

  • 1/2 lb. cooked lamb, thinly sliced
  • 6 slices of whole grain bread
  • 4 strips of bacon, cooked
  • 4 leaves of lettuce
  • 1 ripe tomato, sliced
  • 1/4 cup mayonnaise
  • 1 tbsp dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mix together mayonnaise and dijon mustard. Season with salt and pepper to taste.
  2. To assemble sandwich, toast the whole grain bread until lightly crisp. Spread the mayo/dijon mixture on one side of each piece of bread.
  3. Place lettuce and tomato on top of the first slice of bread. Being with a layer of lamb, add a layer of bacon and repeat lamb-bacon-lamb. Top off with the other piece of bread. Slice into halves and serve.
