Cobb Salad Recipe
Ingredients:
- 1 head of lettuce
- 2 cooked chicken breasts, chopped
- 6 strips of bacon, cooked and crumbled
- 3 hard-boiled eggs, chopped
- 1 avocado, chopped
- 1/2 cup blue cheese crumbles
- 1/2 cup chopped tomatoes
- 1/2 cup chopped red onion
- 1/2 cup corn kernels (optional)
- 1/2 cup chopped cucumber (optional)
Dressing:
- 1/2 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 1 tbsp Dijon mustard
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions:
- Wash and chop the lettuce into bite-sized pieces and arrange in a large salad bowl.
- Add the chicken, bacon, eggs, avocado, blue cheese crumbles, tomatoes, red onion, corn and cucumber (if using) on top of the lettuce in rows.
- Prepare the dressing: In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic powder, salt, and pepper until well combined.
- Drizzle the dressing over the salad and toss to combine.
