Cobb Salad Recipe

Ingredients:

  • 1 head of lettuce
  • 2 cooked chicken breasts, chopped
  • 6 strips of bacon, cooked and crumbled
  • 3 hard-boiled eggs, chopped
  • 1 avocado, chopped
  • 1/2 cup blue cheese crumbles
  • 1/2 cup chopped tomatoes
  • 1/2 cup chopped red onion
  • 1/2 cup corn kernels (optional)
  • 1/2 cup chopped cucumber (optional)

Dressing:

  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions:

  1. Wash and chop the lettuce into bite-sized pieces and arrange in a large salad bowl.
  2. Add the chicken, bacon, eggs, avocado, blue cheese crumbles, tomatoes, red onion, corn and cucumber (if using) on top of the lettuce in rows.

  4. Drizzle the dressing over the salad and toss to combine.
