Cockerel with Chanterelles Recipe
Ingredients
- 1 whole cockerel (about 2 kg)
- 500 g chanterelle mushrooms
- 2 onions, diced
- 4 garlic cloves, minced
- 2 tbsp olive oil
- 1 tbsp butter
- 1 tbsp fresh thyme leaves
- 1 tbsp fresh rosemary leaves
- 1 cup chicken broth
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Clean the cockerel inside and out. Trim any excess fat and pat dry.
- In a large skillet, heat the olive oil on medium-high heat. Add the diced onions and minced garlic to the skillet. Cook until the onions are translucent, stirring occasionally.
- Add the chanterelles to the skillet. Cook until the mushrooms release their liquid and the liquid has evaporated, about 5-7 minutes.
- Remove the skillet from the heat and add the butter, thyme leaves, and rosemary leaves. Stir until the butter is melted and the herbs are evenly distributed among the mushrooms.
- In a roasting pan, place the cockerel. Season the inside of the cockerel with salt and pepper. Fill the cavity of the cockerel with the mushroom mixture.
- Truss the cockerel with kitchen twine and season the outside of the cockerel with salt and pepper.
- Pour the chicken broth into the roasting pan around the cockerel.
- Cover the roasting pan with foil and bake the cockerel in the oven for 1 hour.
- After an hour, remove the foil and continue to bake the cockerel for an additional 30 minutes or until the skin is golden brown and the internal temperature reads 165°F (74°C).
- Remove the cockerel from the oven and let it rest for 10-15 minutes before carving and serving.
