Cockerel with Chanterelles Recipe

Ingredients

  • 1 whole cockerel (about 2 kg)
  • 500 g chanterelle mushrooms
  • 2 onions, diced
  • 4 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 tbsp fresh thyme leaves
  • 1 tbsp fresh rosemary leaves
  • 1 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Clean the cockerel inside and out. Trim any excess fat and pat dry.
  3. In a large skillet, heat the olive oil on medium-high heat. Add the diced onions and minced garlic to the skillet. Cook until the onions are translucent, stirring occasionally.
  4. Add the chanterelles to the skillet. Cook until the mushrooms release their liquid and the liquid has evaporated, about 5-7 minutes.
  5. Remove the skillet from the heat and add the butter, thyme leaves, and rosemary leaves. Stir until the butter is melted and the herbs are evenly distributed among the mushrooms.
  6. In a roasting pan, place the cockerel. Season the inside of the cockerel with salt and pepper. Fill the cavity of the cockerel with the mushroom mixture.
  7. Truss the cockerel with kitchen twine and season the outside of the cockerel with salt and pepper.
  8. Pour the chicken broth into the roasting pan around the cockerel.
  9. Cover the roasting pan with foil and bake the cockerel in the oven for 1 hour.
  10. After an hour, remove the foil and continue to bake the cockerel for an additional 30 minutes or until the skin is golden brown and the internal temperature reads 165°F (74°C).
  11. Remove the cockerel from the oven and let it rest for 10-15 minutes before carving and serving.
