Cod en Papillote

Ingredients:

  • 4 (6-ounce) skinless cod fillets
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • ½ teaspoon of black pepper
  • 1 red bell pepper, sliced into thin strips
  • 1 yellow bell pepper, sliced into thin strips
  • 1 medium-sized zucchini, sliced into thin rounds
  • 1 medium-sized yellow squash, sliced into thin rounds
  • 1 tablespoon of fresh thyme leaves
  • 2 cloves of garlic, minced
  • 4 slices of lemon

Instructions:

  1. Preheat the oven to 400°F.
  2. Take 4 large pieces of parchment paper and fold each one in half. Cut out a heart shape from each folded paper and open them up.
  3. Brush one side of each heart-shaped parchment paper with olive oil.
  4. Season each of the cod fillets with salt and pepper. Place each fillet on one side of the parchment paper.
  5. Divide the sliced red and yellow bell peppers and the sliced zucchini and yellow squash between the four pieces of parchment paper, placing the vegetables next to the cod fillet.
  6. Sprinkle the thyme and garlic over the fish and vegetables.
  7. Place a slice of lemon over each fillet and 1 tablespoon of olive oil.
  8. Fold the other half of each parchment paper over the fish and vegetables and crimp the edges together to form a sealed pouch.
  9. Place the sealed pouches on a large baking sheet and bake in the oven for 20-25 minutes, or until the fish is fully cooked and the vegetables are tender.
  10. Carefully open the parchment paper pouches by using scissors and enjoy!
