Cod with Mussels and Roasted Cauliflower

Ingredients:

  • 4 cod fillets
  • 1 lb. fresh mussels, cleaned and debearded
  • 1 head of cauliflower, cut into florets
  • 2 cloves of garlic, minced
  • 4 tbsp. olive oil
  • 1/4 cup dry white wine
  • Salt and pepper, to taste

Instructions:

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. In a large bowl, toss the cauliflower florets with 2 tbsp. of olive oil, minced garlic, salt and pepper to taste. Spread the cauliflower onto a baking sheet in a single layer and roast in the oven for 20 to 30 minutes.
  3. In a large skillet over medium heat, add mussels, wine, and cover with a lid. Allow to cook for 3-5 minutes, until mussels have opened. Discard any unopened mussels.
  4. In another skillet, heat up 2 tbsp. of olive oil and cook the cod fillets for 3 to 4 minutes per side, or until golden brown. Season with salt and pepper.
  5. Plate the roasted cauliflower, cod fillets, and mussels on a serving dish. Garnish with your choice of herbs.
