- 1 cup red lentils
- 4 cups water
- 1 onion, chopped

- 1 tablespoon ginger, grated
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon turmeric
- 1/2 teaspoon salt
- 1 tablespoon ghee or vegetable oil

Instructions:
- Rinse the lentils in cold water and drain. Put them in a saucepan, add 4 cups of water and bring to boil. Reduce heat and let simmer uncovered, skimming off any foam that rises to the top, for about 20 minutes or until the lentils are tender but not mushy.
- Meanwhile, heat the ghee or vegetable oil in a frying pan over medium heat. Add the chopped onion and fry for about 5 minutes or until it becomes soft and begins to change color. Add garlic and ginger and cook for another 2-3 minutes or until fragrant.
- Add the spices (cumin, coriander, turmeric and salt) to the onion mixture and stir for 30 seconds. Pour the onion mixture into the pan with the boiled lentils and stir well. Cook the dhal for an additional 10-15 minutes over medium-low heat until it thickens and develops a rich flavor. Serve garnished with chopped fresh coriander leaves.
