Cottage Cheese and Apple Cake Recipe

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 cup cottage cheese, drained
  • 1 large apple, peeled and diced
  • 1/4 cup sliced almonds, toasted

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate large bowl, beat the butter and sugar together until light and fluffy.
  4. Add the egg and beat until well combined.
  5. Stir in the cottage cheese and diced apple.
  6. Add the dry ingredients to the wet ingredients and mix until thoroughly combined.
  7. Pour the batter into a greased 9-inch round cake pan.
  8. Sprinkle the top of the batter with sliced almonds.
  9. Bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  10. Let the cake cool for 10 minutes in the pan, then remove and transfer to a wire rack to cool completely.
