Sorrento Pasta Recipe
Ingredients:
- 1 pound of pasta (penne, fusilli, or farfalle)
- 1/4 cup of olive oil
- 1/2 yellow onion, diced
- 3 cloves of garlic, minced
- 1/2 cup of Kalamata olives, pitted and sliced
- 1/2 cup of sun-dried tomatoes, sliced
- 1/4 cup of capers
- 1/4 cup of fresh parsley, chopped
- Salt and pepper to taste
- 1/4 cup of Parmesan cheese, grated
Instructions:
- Cook the pasta according to the package instructions until al dente. Drain and reserve 1/2 cup of pasta water.
- In a large frying pan, heat the olive oil over medium heat.

- Stir in the sliced olives, sun-dried tomatoes, and capers. Cook for 3-4 minutes to allow the flavors to meld together.
- Stir in the reserved pasta water and simmer until the sauce begins to thicken, about 5 minutes.
- Stir in the chopped parsley and season with salt and pepper to taste.
- Add the cooked pasta to the sauce and toss to combine.
- Top with grated Parmesan cheese and serve.
