Cream of Coral Lentils

Ingredients

  • 1 cup coral lentils
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 3 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the coral lentils and set them aside.
  2. Heat 2 tablespoons of olive oil in a large saucepan over medium heat.
  3. Add the chopped onion and minced garlic cloves and sauté until the onion is translucent.
  4. Add the rinsed coral lentils to the saucepan and stir to coat them with the oil and onions. Sauté for 1-2 minutes.
  5. Pour in the vegetable broth and season with salt and pepper to taste.
  6. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 25-30 minutes, or until the lentils are fully cooked.

  9. Add the heavy cream to the pureed lentil mixture and stir well.
  10. Put the saucepan back on the stove over medium heat and let the cream of coral lentils mixture come to a gentle simmer for 5 more minutes.
  11. Remove from heat and serve hot.
