Cream of Coral Lentils
Ingredients
- 1 cup coral lentils
- 1 onion, chopped
- 2 garlic cloves, minced
- 3 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Rinse the coral lentils and set them aside.
- Heat 2 tablespoons of olive oil in a large saucepan over medium heat.
- Add the chopped onion and minced garlic cloves and sauté until the onion is translucent.
