Cream of Tomato Soup

Ingredients:

  • 2 tablespoons unsalted butter
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 2 cans (28 ounces each) whole peeled tomatoes
  • 2 cups chicken or vegetable broth
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 2/3 cup heavy cream

Instructions:

  1. Melt the butter in a large pot over medium heat.
  2. Add the onion and garlic, and cook until the onion is translucent, stirring occasionally, about 5 minutes.
  3. Add the tomatoes, their juice, broth, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Remove the soup from the heat and allow to cool slightly.
  5. Using an immersion blender or working in batches in a blender, puree the soup to a smooth consistency.
  6. Return the soup to the pot and stir in the heavy cream.
  7. Heat the soup over low heat, stirring occasionally, until warmed through.
