Creamy Cheese Risotto

Ingredients

  • 1 1/2 cups Arborio rice
  • 4 cups chicken or vegetable broth
  • 1/2 cup white wine
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 3 tablespoons butter
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded Mozzarella cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a medium-sized pot, bring the chicken or vegetable broth to a simmer and keep it warm.
  2. In a large pan over medium heat, sauté the onion and garlic in butter until the onion is translucent, about 5 minutes.
  3. Stir in the Arborio rice and cook for about another 5 minutes, until it becomes slightly translucent.
  4. Add the white wine and stir until it has been absorbed by the rice.
  5. Begin adding the warm broth to the pan, about 1/2 cup at a time, stirring constantly and waiting until each addition has been absorbed by the rice before adding the next. This process should take about 20-25 minutes.
  6. Once all of the broth has been added and absorbed, stir in the Parmesan and Mozzarella cheese until it has been fully melted and incorporated into the risotto.
  7. Season with salt and pepper to taste.
  8. Transfer the risotto to a serving dish and sprinkle with chopped parsley for garnish.
