Creamy Cheese Risotto
Ingredients
- 1 1/2 cups Arborio rice
- 4 cups chicken or vegetable broth
- 1/2 cup white wine
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 3 tablespoons butter
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded Mozzarella cheese
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a medium-sized pot, bring the chicken or vegetable broth to a simmer and keep it warm.
- In a large pan over medium heat, sauté the onion and garlic in butter until the onion is translucent, about 5 minutes.
- Stir in the Arborio rice and cook for about another 5 minutes, until it becomes slightly translucent.
- Add the white wine and stir until it has been absorbed by the rice.
- Begin adding the warm broth to the pan, about 1/2 cup at a time, stirring constantly and waiting until each addition has been absorbed by the rice before adding the next. This process should take about 20-25 minutes.
- Once all of the broth has been added and absorbed, stir in the Parmesan and Mozzarella cheese until it has been fully melted and incorporated into the risotto.
- Season with salt and pepper to taste.
- Transfer the risotto to a serving dish and sprinkle with chopped parsley for garnish.
