Dal Coconut-Lime Recipe

Ingredients:

  • 1 cup dry yellow split dal
  • 3 cups water
  • 1 tablespoon coconut oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 green chili, chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • 1 cup coconut milk
  • 1 lime, juice and zest
  • Salt, to taste

Instructions:

  1. Rinse the split dal in cold water and drain.
  2. In a pot, add the dal and 3 cups of water. Cook over medium-high heat until it comes to a boil.
  3. Skim off any foam that rises to the surface.
  4. Lower the heat, cover, and simmer for 20 minutes or until the dal is soft and tender. Keep it aside.
  5. In another pot, heat coconut oil over medium heat.
  6. Add cumin seeds and let them splutter.
  7. Add the chopped onion, garlic, ginger, and green chili. Saute until the onion is translucent.
  8. Add turmeric, coriander, and red chili powder. Saute for a minute.
  9. Pour in the coconut milk, cooked dal, and salt. Mix well.
  10. Simmer the dal for 10-15 minutes on medium heat or until it thickens, stirring occasionally.
  11. Add the lime juice and zest. Stir well and turn off the heat.
  12. Serve hot with plain rice or roti.
