Ingredients:

  • 2 duck breasts, skin on
  • 2 sweet potatoes, peeled and diced into bite-size pieces
  • 2 apples, cored and chopped into bite-size pieces
  • 2 clementines, peeled and segmented
  • 4 sprigs of thyme
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F.
  2. Score the duck breasts’ skin in a diamond pattern, season them with salt and pepper. Place them, skin side down, in a cold pan over medium heat. Cook for 7-10 minutes until the skin is crispy and golden brown. Flip the breasts and cook for an additional 3-4 minutes. Transfer the breasts to a baking sheet and roast in the oven for 8-10 minutes.
  3. Toss the diced sweet potatoes in a bowl with garlic, thyme leaves, olive oil, salt, and pepper. Arrange them on a separate baking sheet and roast in the oven for 20-25 minutes, or until they are fork-tender and golden brown.
  4. In a separate pan on medium heat, sauté the chopped apples and clementines until they are soft and caramelized.
  5. Serve the duck breasts topped with the caramelized apple and clementine mixture with the roasted sweet potatoes on the side.
