Duck Breast with Honey and Plums
Ingredients:
- 2 duck breasts
- 1/4 cup honey
- 1/2 tsp minced garlic
- Salt and pepper, to taste
- 1 tbsp olive oil
- 4 plums, pitted and halved
- 1/4 cup chicken broth
- 2 tbsp balsamic vinegar
- 2 tbsp fresh parsley, chopped
Directions:
- Preheat oven to 375°F.
- Score the top fat of the duck breasts in a crisscross pattern. Be sure not to cut through the meat.
- In a small bowl, whisk together honey, garlic, salt and pepper. Brush mixture on top of duck breasts.
- Heat olive oil in an oven-safe skillet over medium-high heat. Add the duck breasts, skin-side down, and cook for 4-5 minutes per side or until nicely browned.
- Remove the duck from the skillet and let it rest. Add the plums to the skillet and cook until soft. Remove the plums from the skillet and set them aside.
- Add chicken broth and balsamic vinegar to the skillet and bring it to a simmer. Cook for 2-3 minutes or until slightly thickened.
- Return the duck breasts to the skillet, top with plums and transfer the skillet to the oven. Bake for 10-12 minutes or until the duck is cooked through.
- Garnish with parsley before serving.
