Ingredients:

  • 1 whole duck, about 5 to 6 pounds
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried thyme
  • 1 medium onion, cut into quarters
  • 1 orange, cut into quarters
  • 4 garlic cloves, peeled and smashed
  • 1 cup chicken stock

Directions:

  1. Preheat your oven to 350°F.
  2. Remove the giblets from the duck, and trim off any excess fat.
  3. In a small bowl, mix together the kosher salt, black pepper, rosemary, and thyme.
