Duck Parmentier with Mushrooms Recipe

Ingredients:

  • 2 duck legs (about 300g each)
  • 3 medium-sized potatoes
  • 1 onion
  • 3 garlic cloves
  • 1 cup of button mushrooms (sliced thinly)
  • 1 tbsp tomato paste
  • 1 cup beef broth
  • 1 bay leaf
  • 1 sprig of thyme
  • 2 tbsp olive oil
  • salt and pepper to taste

Instructions:

  1. Preheat the oven to 180°C (356°F).
  2. Peel and dice the potatoes into small chunks. Boil them for about 15 minutes or until they are soft enough to mash.
  3. Peel and slice the onion and garlic cloves.
  4. In a large pan, heat the olive oil and brown the duck legs on both sides. Once browned, remove and place aside on a plate.
  5. Add the onions and garlic to the same pan and sauté until onions are translucent.
  6. Add the mushrooms and sauté until they become soft and all the liquid has evaporated, about 7 minutes.
  7. Add the tomato paste, beef broth, bay leaf, thyme, salt, and pepper to the pan. Cook on low heat for 20 minutes.
  8. Remove the bay leaf and thyme sprig from the sauce.
  9. Shred the meat from the duck legs and mix it in with the sauce.
  10. Pour the duck and mushroom mixture into an oven-safe dish.
  11. Mash the potatoes and spoon them over the duck mixture evenly.
  12. Bake for 20 minutes or until the top becomes golden brown.
