Duck Soba Soup Recipe
Ingredients
- 1 whole duck
- 8 cups water
- 6 garlic cloves, minced
- 2 inches ginger, sliced
- 1 onion, sliced
- 1 tablespoon soy sauce
- 1 tablespoon mirin
- 1 tablespoon sake
- 4 bundles soba noodles
- 2 green onions, sliced
- 1/2 cup cilantro, chopped
Instructions
- Clean the duck and cut into 8 pieces. Discard excess fat.
- In a large pot, combine water, garlic, ginger, onion, soy sauce, mirin, and sake.
- Add duck pieces to the pot and bring to a boil. Reduce heat to low and simmer for 1 hour.
- Remove duck pieces from the pot and set aside to cool.
- Strain the soup and bring it to a boil again.
- Cook soba noodles according to package instructions.
- To serve, divide cooked soba noodles into bowls. Pour hot soup over the noodles and add duck pieces on top.
