Duck Soba Soup Recipe

Ingredients

  • 1 whole duck
  • 8 cups water
  • 6 garlic cloves, minced
  • 2 inches ginger, sliced
  • 1 onion, sliced
  • 1 tablespoon soy sauce
  • 1 tablespoon mirin
  • 1 tablespoon sake
  • 4 bundles soba noodles
  • 2 green onions, sliced
  • 1/2 cup cilantro, chopped

Instructions

  1. Clean the duck and cut into 8 pieces. Discard excess fat.
  2. In a large pot, combine water, garlic, ginger, onion, soy sauce, mirin, and sake.
  3. Add duck pieces to the pot and bring to a boil. Reduce heat to low and simmer for 1 hour.
  4. Remove duck pieces from the pot and set aside to cool.
  5. Strain the soup and bring it to a boil again.
  6. Cook soba noodles according to package instructions.
  7. To serve, divide cooked soba noodles into bowls. Pour hot soup over the noodles and add duck pieces on top.
  8. Garnish with green onions and cilantro.
