Easy Zucchini Tortilla Recipe

Ingredients:

  • 2 medium-sized zucchini, sliced
  • 1 small onion, chopped
  • 4 cloves of garlic, minced
  • 4 eggs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a large non-stick skillet over medium heat. Add sliced zucchini, chopped onion, and minced garlic. Sprinkle with salt and pepper and sauté for about 10 minutes or until the zucchini is golden brown and tender.
  2. In a mixing bowl, whisk the eggs and Parmesan cheese. Pour the egg mixture over the zucchini and stir gently to distribute evenly.
  3. Cook the tortilla for about 6-8 minutes or until the bottom begins to set. Carefully invert the tortilla onto a plate or use a large flat lid to flip it back into the skillet. Cook for another 3-4 minutes or until the tortilla is set and golden brown on both sides.

Serving Suggestions:

Serve this easy zucchini tortilla warm or at room temperature as a light lunch, brunch or dinner with some crispy bread and a simple green salad on the side. You can store any leftovers in the fridge for up to 2 days.
