Eggplant Chicken Tagine Recipe
Tagine is a slow-cooked Moroccan stew typically made with meat, vegetables, fruits, and spices. In this recipe, we combine chicken and eggplant to create a hearty and flavorful dish that’s perfect for a cozy weeknight dinner.
Ingredients:
- 1 lb boneless, skinless chicken thighs
- 1 large eggplant, cubed

Instructions:
- In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat. Add the chicken and cook for 3-4 minutes per side, or until browned. Remove the chicken from the pot and set aside.
- Reduce the heat to medium. Add the onion and garlic to the pot and sauté for 2-3 minutes, or until the onion is translucent.
- Add the eggplant and sauté for another 2-3 minutes, or until slightly softened.
- Add the cumin, smoked paprika, cinnamon, ginger, coriander, salt, and black pepper to the pot and stir to combine.

- Serve the tagine hot, garnished with sliced almonds.
