Endives au Gratin with Salters Recipe

Ingredients:

  • 6 endives
  • 50g butter
  • 50g flour
  • 250ml milk
  • Salt and pepper
  • 100g grated Emmental cheese
  • 4 salters (thin slices of cured ham)

Instructions:

  1. Cut off the end of each endive and remove any brown or wilted leaves. Cut them in half lengthways.
  2. Boil the endives for approximately 10-12 minutes until they are tender. Drain well and pat dry.
  3. Preheat the oven to 180°C.
  4. Melt the butter in a saucepan over low heat. Add the flour and mix well. Cook for a minute or two while stirring constantly.
  5. Slowly add the milk, a little at a time, stirring constantly until the mixture becomes smooth and thick. Season with salt and pepper to taste.
  6. Place the endives in an ovenproof dish and pour the sauce over them.
  7. Sprinkle the grated Emmental cheese over the top.
  8. Cut the salters into thin strips and scatter them over the cheese.
  9. Bake in the oven for 20-25 minutes, until golden and crispy on top.
  10. Serve hot and enjoy!
