Falafel Recipe
Ingredients:
- 1 1/2 cups of chickpeas
- 1/2 cup of coarsely chopped onion
- 2 cloves of garlic
- 1 tablespoon of chopped fresh parsley
- 1 tablespoon of chopped fresh cilantro
- 1 teaspoon of salt
- 1/2 teaspoon of ground cumin
- 1/2 teaspoon of baking soda
- 1 tablespoon of all purpose flour
- Vegetable oil for frying
Instructions:
- Soak the chickpeas in cold water overnight. Drain and rinse.
- In a food processor, combine the chickpeas, onion, garlic, parsley, cilantro, salt, cumin and baking soda. Pulse until finely chopped but not pureed.
- Sprinkle in the flour and pulse until the mixture comes together to form a dough-like consistency. Transfer the mixture to a bowl and cover with plastic wrap. Refrigerate for at least 1 hour.
- Using a tablespoon, shape the falafel mixture into small balls or patties.
- In a large skillet, heat up enough oil to reach a depth of about 2 inches. Fry the falafel in batches until golden brown and crispy. Drain on paper towels.
