Filet mignon en papillote: family recipe

Filet Mignon en Papillote

Ingredients:

  • 4 filet mignons (about 6-8 oz each)
  • 4 slices of bacon
  • 4 large mushrooms, sliced
  • 1 small onion, diced
  • 1 clove garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Parchment paper

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Heat the olive oil in a skillet over medium heat. Add the onion and garlic and cook until softened, about 3 minutes.
  3. Add the mushrooms and thyme and cook until the mushrooms have released their moisture, about 5 minutes. Season with salt and pepper to taste.
  4. Place a slice of bacon on each piece of parchment paper. Place a filet mignon on top of the bacon and sprinkle with salt and pepper.
  5. Divide the mushroom mixture evenly between the four filet mignons.
  6. Wrap the parchment paper around the filet mignon and twist the ends to seal the papillotes.
  7. Place the papillotes on a baking sheet and bake for 10-12 minutes for medium-rare. Increase the cooking time for more well-done filet mignons.
  8. To serve, carefully cut open the papillotes and transfer the filet mignon and mushroom mixture to a plate.
