- 4 slices of bacon
- 4 large mushrooms, sliced
- 1 small onion, diced
- 1 clove garlic, minced
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Parchment paper
Instructions:
- Preheat the oven to 400°F (200°C).
- Heat the olive oil in a skillet over medium heat. Add the onion and garlic and cook until softened, about 3 minutes.
- Add the mushrooms and thyme and cook until the mushrooms have released their moisture, about 5 minutes. Season with salt and pepper to taste.
- Place a slice of bacon on each piece of parchment paper. Place a filet mignon on top of the bacon and sprinkle with salt and pepper.
- Divide the mushroom mixture evenly between the four filet mignons.
- Wrap the parchment paper around the filet mignon and twist the ends to seal the papillotes.
- Place the papillotes on a baking sheet and bake for 10-12 minutes for medium-rare. Increase the cooking time for more well-done filet mignons.
- To serve, carefully cut open the papillotes and transfer the filet mignon and mushroom mixture to a plate.
