Filet of Beef from Limousin, Braised Cheeks, Winemaker Sauce Recipe
Ingredients:
- 1 filet of beef from Limousin (Approximately 1.5 to 2 pounds)
- 2 beef cheeks (cleaned)
- 2 cups beef stock
- 1 bottle of red wine (Pinot Noir or Cabernet Sauvignon)
- 1 onion, diced
- 2 cloves of garlic, minced
- 4 tablespoons butter
- 2 tablespoons olive oil
- Sea salt and fresh cracked pepper to taste
Instructions:
- Preheat the oven to 375 degrees F.
- Season both sides of the filet of beef with salt and pepper.
- In a Dutch oven over medium-high heat, heat 2 tablespoons of olive oil and 2 tablespoons of butter. Add the beef cheeks and sear on all sides until browned. Remove and set aside.
- In the same Dutch oven, add the diced onions, minced garlic, and the remaining 2 tablespoons of butter. Sauté until the onions are translucent.
- Add the beef stock and the bottle of red wine to the Dutch oven, scraping the bottom to deglaze the pan. Season with salt and pepper to taste.
- Bring the sauce to a boil and then reduce to a simmer. Add the beef cheeks back to the pot.
- Cover the Dutch oven with a tight-fitting lid and place it in the preheated oven. Braise for 3 hours.
- Remove the Dutch oven from the oven and set it on the stove over medium-high heat. Remove the beef cheeks from the sauce and set aside. Simmer the sauce until it reduces and thickens, about 10-15 minutes.
- While the sauce is reducing, heat a cast-iron skillet over high heat. Add 2 tablespoons of olive oil. Sear the filet of beef on each side for about 2 minutes.
- Place the seared filet of beef in the oven and roast until internal temperature reaches 130 degrees F for medium-rare, about 10-15 minutes.
- Remove the filet of beef from the oven and let it rest for a few minutes before slicing.
- In a heated serving platter, place the sliced filet of beef and top with two forkfuls of the braised beef cheeks. Drizzle the winemaker sauce over the beef.
- Serve hot and enjoy!
