Fillet of Milk-Fed Veal with Celery Balls and Black Truffle
Ingredients:
- – 4 fillets of milk-fed veal (150g each)
- – 2 tablespoons of olive oil
- – 1 celery root
- – 50g of black truffle
- – Salt and pepper to taste
Instructions:
- Peel the celery root and cut it in small balls with a melon baller.
- Heat a saucepan with water and place the celery balls to boil for 3 minutes and then remove from heat. Set aside.
- Add salt and pepper to the fillets of milk-fed veal on both sides.
- In a frying pan, heat the olive oil over medium heat.
- Once the oil is hot, sear the fillets of milk-fed veal for 1 minute on both sides or until browned and cooked to desire.
- Slice the black truffle into thin pieces and place on top of the fillets of milk-fed veal while it’s hot to release its aroma.
- Plate the fillets of milk-fed veal and add the boiled celery balls around it.
