Fillet of Milk-Fed Veal with Celery Balls and Black Truffle

Ingredients:

  • – 4 fillets of milk-fed veal (150g each)
  • – 2 tablespoons of olive oil
  • – 1 celery root
  • – 50g of black truffle
  • – Salt and pepper to taste

Instructions:

  1. Peel the celery root and cut it in small balls with a melon baller.
  2. Heat a saucepan with water and place the celery balls to boil for 3 minutes and then remove from heat. Set aside.
  3. Add salt and pepper to the fillets of milk-fed veal on both sides.
  4. In a frying pan, heat the olive oil over medium heat.
  5. Once the oil is hot, sear the fillets of milk-fed veal for 1 minute on both sides or until browned and cooked to desire.
  6. Slice the black truffle into thin pieces and place on top of the fillets of milk-fed veal while it’s hot to release its aroma.
  7. Plate the fillets of milk-fed veal and add the boiled celery balls around it.
