Ingredients
- 4 skinless, boneless fish fillets (halibut, cod or salmon recommended)
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 tablespoons butter
- 2 tablespoons olive oil
- 1/4 cup dry white wine
- 2 tablespoons lemon juice
- 1/4 cup capers, drained

Instructions
- Pat the fish fillets dry with paper towels.
- In a shallow dish, mix together the flour, salt and pepper.
- Dredge the fish fillets in the flour mixture, shaking off any excess.
- In a large skillet over medium-high heat, melt 2 tablespoons of the butter with the olive oil.
- Place the fish fillets in the skillet and cook them until golden brown on both sides, about 3 to 5 minutes per side, depending on the thickness of the fillets.

- In the same skillet used to cook the fish, add the white wine and lemon juice and stir to combine.
- Scrape the bottom of the skillet to release any brown bits.
- Stir in the capers and remaining 2 tablespoons of butter and cook for an additional 2 to 3 minutes, until the sauce has thickened slightly.
- Stir in the parsley and basil leaves, and serve the sauce over the fish fillets.
