Fish & chic – Delight Recipe

Ingredients

  • 4 skinless, boneless fish fillets (halibut, cod or salmon recommended)
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 tablespoons butter
  • 2 tablespoons olive oil
  • 1/4 cup dry white wine
  • 2 tablespoons lemon juice
  • 1/4 cup capers, drained
  • 1/4 cup chopped fresh parsley leaves
  • 1/4 cup chopped fresh basil leaves

Instructions

  1. Pat the fish fillets dry with paper towels.
  2. In a shallow dish, mix together the flour, salt and pepper.
  3. Dredge the fish fillets in the flour mixture, shaking off any excess.
  4. In a large skillet over medium-high heat, melt 2 tablespoons of the butter with the olive oil.
  5. Place the fish fillets in the skillet and cook them until golden brown on both sides, about 3 to 5 minutes per side, depending on the thickness of the fillets.
  6. Remove the fish fillets from the skillet and place them on a serving platter.
  7. In the same skillet used to cook the fish, add the white wine and lemon juice and stir to combine.
  8. Scrape the bottom of the skillet to release any brown bits.
  9. Stir in the capers and remaining 2 tablespoons of butter and cook for an additional 2 to 3 minutes, until the sauce has thickened slightly.
  10. Stir in the parsley and basil leaves, and serve the sauce over the fish fillets.
