Ingredients:

  • 1 lb fish fillet (cut into 1-inch cubes)
  • 1 large red onion (cut into 1-inch pieces)
  • 2 bell peppers (cut into 1-inch pieces)
  • 1 tsp smoked paprika
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp garlic powder
  • 1 tsp chilli flakes
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 lime (cut into wedges for serving)

Instructions:

  1. Preheat the grill to high.
  2. In a large bowl, mix together the smoked paprika, cumin powder, coriander powder, garlic powder, chilli flakes, olive oil, and salt to make a spice mixture.
  3. Add the fish cubes to the spice mixture and toss to coat well.
  4. Alternate the fish cubes, onion, and bell pepper pieces onto skewers until all ingredients are used up.
  5. Grill the skewers for 6-8 minutes, turning occasionally, until the fish is cooked through and the vegetables are charred.
  6. Remove the skewers from the grill and squeeze lime wedges over them.
  7. Serve hot with a side of rice and grilled vegetables.
